smime.p7s? That's an S/MIME digital signature, and I find it a bit
disturbing that you've found an iPhone (if your signature is to be
trusted) mail client that shows it as an attachment rather than just
giving you the status of the signature.
As for opening it: I'd say that a good general rule of thumb is that if
you receive an attachment of a type you don't recognize from somebody
you have no knowledge of that your best course of action would be to not
open it at all. YMMV, as always.
