The host name is the name of your machine (the host), a name
that _you_ define. It can be anything, and it usually is not
visible anywhere, so you can call it as you like; "sony" is
possible, or "laptop", or "test", or "localhost" - whatever
you like. Usually keep it lowercase, do not use special
characters (just a-z, 0-9 if needed).

Without a hostname, it won't work. This name is needed for
the system in order to function properly.

Correct, you can install from memstick. Additional software
can then be installed via Internet (with wired or wireless
access).

Nothing will be deleted. FreeBSD can only install when there
is sufficient _unused_ (unallocated) space on the disk. Make
some free space from Linux, using its graphical partition
editor. Leave that space untouched, do not create anything
there, it's not needed.

You can choose between a UFS and a ZFS installation. ZFS is
usually preferred on server systems. Both support encryption.
