I have done this before, and you can lose some build-time dependencies: you can nerf the entire clang/llvm dependancy (one of the largest) by disabling Gallium, and disabling documentation allows you to lose a whole swathe of unneeded garbage.
I didn’t mind having Python installed because I use it semi-frequently anyway, and even if I didn’t, it’s one package - not even a very large one in terms of file size or build time.
For reference’s sake, I used the X11 modular build scripts, and the process was mostly very smooth.
