I just set up a new Wiki, and I used dokuwiki for it. I'm impressed by
the ease of setup and it uses flat .txt files which for my limited write
situation is quite enough.

Installation instructions are quite simple, but do involve giving the
webserver user write access to a few directories (you might not like this
depending on your setup, but basically if you're the only real user on this
machine it should not matter too much):
