FreeBSD 12.1 install was a pretty straightforward from a USB stick,
though as I recall the G5s are fussy about USB sticks, e.g. they don't
recognize U3 flash drives.  Install from CD should work as well.

Then "pkg install desktop-installer" and "desktop-installer" to set up
the GUI.

Lumina desktop works well on these systems.  It's probably the fastest
full-blown DE.  LXDE was really sluggish on my iMac for some reason.

Some runaway fan issues on the PowerMac that are reportedly avoided by
disabling SMP.
