Upgrade math/py-sympy to 1.7.1

- The attached patch upgrades SymPy to 1.7.1;

- Since I'm there, add a test target.

Note: several failures are encountered during these tests, and I reported them
at <https://github.com/sympy/sympy/issues/20960>.
