You can build net-mgmt/zabbix5-server self with options you need - PostgreSQL.
Also you can set default mysql server to mariadb:
echo 'DEFAULT_VERSIONS+= mysql=10.5m' >> /etc/make.conf
And then build net-mgmt/zabbix5-server with option mysql on.
