 I guess you should implement NOPORTDOCS behaviour and use DOCSDIR and 
 EXAMPLEDIR variable. The best place for examples is 
 LOCALBASE/share/examples instead of LOCALBASE/share/doc/PORTNAME/examples.
 
 Yes, you should redefine do-install for that.
