The FreeBSD ISO's/CD's ship with a "lite" version of the gnome desktop.

Yes, there are 5 primary ports for the gnome2 desktop:
gnome2-lite:   The "meta-port" of the GNOME desktop slimmed down for 
FreeBSD releases.
gnome2:   The "meta-port" for the GNOME 2 integrated X11 desktop (This 
is the one your thinking about).
gnome2-fifth-toe:   Additional GNOME 2 applications not included in the 
core desktop (stuff like gaim, bluefish, rhythmbox, etc).
gnome2-power-tools:   "Geektoys" for the GNOME 2 power user.
gnome2-office:   GNOME 2 office applications (abiword, gnumeric, 
evolution, etc).

I'm not sure what you mean by this because freebsd use a ports system, 
package's in freebsd are prebuilt binaries from ports, for a better

I have no clue what to tell you here.

FreeBSD 5.2.1 Ships with Gnome 2.4
FreeBSD 5.3RC2 Ships with Gnome 2.6 (and can be easily upgraded to 2.8)

I'll leave it up to you to deside what to do, but here is where you can 
download FreeBSD 5.3RC2:
ftp://ftp.freebsd.org/pub/FreeBSD/ISO-IMAGES-i386/5.3

And If you want Gnome 2.8 then you have two options: 
http://www.freebsd.org/gnome/
Use the marcusmerge script to update your ports tree: 
http://www.freebsd.org/gnome/docs/develfaq.html
Wait for Gnome 2.8 to be put into the ports tree (it will happen when  
FreeeBSD 5.3 is offically released) and then update your ports.
