It's not going to happen on x11/gnome2 or x11/gnome2-fifth-toe. But as Joe 
said, you are welcome to create your own meta-port.

Err, why do you chose the x11/gnome2-fifth-toe in the first place anyway? 
It's feature, if you want the gnome2-fifth-toe then you will have those 
apps. If you don't, then pick apps in the ports what you want to install 
instead or even better create your own meta-port.

As for epiphany, it's part of Gnome so you should take the deal with the 
Gnome devlopers/teams over at www.gnome.org..
