it all depends on what you really want to do. like i said before, you 
could do a lot things with "at" commands. you can send them via cable 
(usb, serial etc.) or via bluetooth (connecting to the serial port 
service on the phone).

if your phone has usb cable, you might want to try multisync (assuming 
freebsd knows about your phone).

limited (only local) bluetooth sniffing can be done with hcidump from 
ports. usb (on windows) sniffing can be done with usbsnoop or usbsniff 
or something like that. it is very similar to portmon from sysinternals.com
