Then there's also "sysctl hw.snd.verbose=3D2" to have more output in "cat /dev/sndstat". Output is a bit cryptic, but it shows how the device is currently used, format conversions, and some feed counters which should increase with playback / recording. Other possibilities are to enable debug messages for uaudio (via sysct) or capture the USB packets to see whether something is transferred.
