Fix devel/py-pydantic-core version requirement

After recent update of port devel/py-pydantic-core from 2.25.1 ==> 2.27.0
Python scripts depending on devel/py-pydantic2 fail to execute due to

Requirement 'pydantic-core==2.25.1' was not met. Installed version: 2.27.0

Reason is a required-version mismatch maintained in pyproject.toml of required
and actually installed version.

A workaround is provided by the patch.
