I've noticed that games/minecraft-server 1.17.1 depends on java/openjdk8, but
it actually requires java/openjdk16:

There's some other fixes that will be needed if staying on 1.17.1. Alternately,
if it's preferred to just go to the latest version at the same time, 1.18.1 is
out, and depends on java/openjdk17.
