Currently this can only done with error prone manual steps. (http://blog.ataboydesign.com/2014/01/25/freebsd-10-with-full-disk-encryption-on-ufs-filesystem/) The ZFS installer does offer encryption, but people might prefer UFS (for reasons of memory usage or performance, e.g. on a virtual server).
